Description

  • 2 pounds (900g) baby potatoes, halved (Yukon Gold or red potatoes work best)
  • 8 oz (225g) block of feta cheese, cut into 1/2-inch cubes
  • 3 tablespoons (45ml) olive oil
  • 4 cloves garlic, minced
  • 2 teaspoons (10g) dried oregano
  • 1 teaspoon (5g) dried rosemary
  • 1 teaspoon (5g) paprika
  • 1/2 teaspoon (2.5g) red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons (30g) fresh parsley, chopped (for garnish)
  • 1 tablespoon (15g) fresh lemon zest (optional)

Instructions

  1. Step 1: Prepare the Potatoes Preheat your oven to 425°F (220°C). Wash the potatoes thoroughly and cut them in half (or quarters if they’re larger). Place them in a large pot and cover with cold water. Add 1 teaspoon of salt and bring to a boil. Parboil for 5-7 minutes until the edges are slightly softened but centers remain firm. Drain thoroughly and let them steam dry in the colander for 2 minutes. Give them a gentle shake to rough up the edges – this creates extra crispy bits!
  2. Step 2: Season the Potatoes Transfer the potatoes to a large mixing bowl. Add olive oil, minced garlic, dried oregano, dried rosemary, paprika, red pepper flakes (if using), salt, and pepper. Toss gently until every potato piece is evenly coated with oil and seasonings. The seasoned potatoes should glisten with oil but not be swimming in it.
  3. Step 3: First Roasting Phase Spread the seasoned potatoes in a single layer on a large baking sheet or in a casserole dish, making sure not to overcrowd them. Leave some space between pieces to allow for proper browning. Place in the preheated oven and roast for 20 minutes until they begin to turn golden.
  4. Step 4: Add the Feta Cheese Remove the baking dish from the oven. Carefully distribute the feta cheese cubes evenly among the potatoes, nestling them between and on top of the potato pieces. The feta should be distributed throughout the dish for maximum flavor integration.
  5. Step 5: Complete the Baking Return the dish to the oven and continue baking for an additional 15-20 minutes, or until the potatoes are deeply golden and crispy, and the feta has softened and started to caramelize slightly on the edges.
