  • 2½ cups (315g) all-purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup (240ml) warm water
  • 6 large eggs
  • 8 oz (225g) shredded mozzarella cheese
  • 4 oz (115g) cheddar cheese, shredded
  • 8 strips bacon, cooked and chopped
  • 2 tablespoons butter, melted
  • ¼ cup (60ml) heavy cream
  • 2 green onions, thinly sliced
  • 1 tablespoon fresh chives, chopped
  • Salt and freshly ground black pepper, to taste
  • Optional: ¼ teaspoon red pepper flakes

Instructions

  1. Step 1: Prepare the Dough If making your own dough, combine flour, yeast, and salt in a large bowl. Add olive oil and warm water, then mix until a shaggy dough forms. Turn onto a floured surface and knead for 5-7 minutes until smooth and elastic. Place in an oiled bowl, cover, and let rise until doubled in size (about 1 hour). If using store-bought dough, allow it to come to room temperature for 30 minutes.
  2. Step 2: Preheat and Prep Position your rack in the middle of the oven and preheat to 475°F (245°C). If you have a pizza stone, place it in the oven while preheating. Meanwhile, cook your bacon until just crisp, drain on paper towels, then chop into pieces. Shred your cheeses and prepare other toppings. In a small bowl, mix the melted butter with heavy cream and a pinch of salt.
  3. Step 3: Shape the Pizza On a floured surface, stretch or roll your dough into a 14-inch circle or rectangle, depending on your baking sheet. Transfer to a parchment-lined baking sheet or a cornmeal-dusted pizza peel if using a stone. Gently fold over the edges slightly to create a rim that will contain the eggs.
  4. Step 4: Add the Toppings Brush the cream-butter mixture over the entire surface of the dough. Sprinkle with ⅔ of the cheese mixture, leaving several small wells for whole eggs. If using some beaten eggs, pour them evenly over the cheese, then crack whole eggs into the wells you created. Top with remaining cheese, bacon pieces, and a sprinkle of salt, pepper, and red pepper flakes if using.
  5. Step 5: Bake to Perfection Carefully transfer your Breakfast Pizza to the oven and bake for 12-15 minutes, until the crust is golden, cheese is bubbly, and egg whites are set but yolks remain slightly runny (or longer if you prefer fully cooked eggs). For the last minute, switch to broil for a beautifully browned top—but watch carefully to prevent burning!
