- 12 corn or flour tortillas (6-inch/15cm), cut into quarters
- 1 lb (450g) breakfast sausage or chorizo, casing removed
- 1 medium onion (about 1 cup/160g), finely diced
- 1 red bell pepper (about 1 cup/150g), diced
- 2 jalapeños (optional), seeded and minced
- 3 cloves garlic, minced
- 10 large eggs
- 1⁄2 cup (120ml) milk or half-and-half
- 2 cups (8oz/225g) shredded Mexican cheese blend, divided
- 1 can (15oz/425g) black beans, drained and rinsed
- 1 cup (175g) fresh or frozen corn kernels
- 2 tbsp taco seasoning
- Salt and pepper to taste
Instructions
- Step 1: Preheat the Oven Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. This size is perfect for the Breakfast Taco Casserole as it allows for proper layering without being too deep or shallow.
- Step 2: Cook the Meat In a large skillet over medium heat, cook the chorizo or breakfast sausage until browned, breaking it apart with a wooden spoon as it cooks, about 5-7 minutes. The meat should be crumbly and fully cooked through with no pink remaining.
- Step 3: Sauté the Vegetables Add the diced onions, bell peppers, and jalapeños (if using) to the skillet with the meat. Sauté until the vegetables have softened, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant. Remove from heat and set aside.
- Step 4: Prepare the Egg Mixture In a large bowl, whisk together the eggs, milk, taco seasoning, salt, and pepper until well combined. The mixture should be completely uniform with no streaks of egg white visible.
- Step 5: Assemble the First Layer Begin assembling your Breakfast Taco Casserole by arranging half of the tortilla quarters in the bottom of your prepared baking dish, slightly overlapping them.
