– 1 tsp paprika

– 2 tbsps tomato paste
– 1 tsp chilli sauce/sriracha
– 130ml milk (1/2 cup + 1 tbsp)
– 110ml double cream (1/4 cup + 3 tbsps)
– 100g mozzarella cheese + extra to sprinkle on top (1 cup + extra)
– 100-120ml pasta water (around 1/2 cup)

Pro Tips for the Best Results

These three techniques will take your cheesy chicken pasta from good to exceptional every time you make it.

Cook pasta to al dente only. Pasta that is slightly firm holds its shape and texture once it finishes cooking in the sauce. Overcooked pasta turns mushy and loses its appeal quickly. Pull it off the heat a minute before the package suggests.

Save your pasta water before draining. This starchy water is liquid gold for the sauce. It helps bind everything together and creates a smooth, glossy consistency that no other ingredient can replicate. Set aside at least half a cup before you drain.

Add the cheese off peak heat. Once you reduce the heat slightly before stirring in the mozzarella, it melts evenly and blends into the sauce rather than clumping. Patience here makes all the difference between a smooth, creamy sauce and a grainy one.

Instructions

Step 1: Boil the Pasta
Add pasta to a pot with cold water, salt, and a little bit of oil. Cook the pasta until al dente. It should be slightly firm and not overly cooked so that it doesn’t become too soft once it finishes cooking in the sauce.

Step 2: Cook the Garlic
In a pan, warm up some oil, then add the fresh minced garlic. Cook this over medium heat for around 1 minute or until the garlic becomes a light golden color. Keep a close eye on it since garlic can burn quickly.

Step 3: Cook the Chicken
Add the bite-sized pieces of chicken to the pan. Cook these over medium-high heat, stirring as you go, for around 3 to 4 minutes or until the chicken turns a white color throughout.

Step 4: Add the Seasonings
Add salt, black pepper, red chilli powder, garlic powder, paprika, onion powder, and oregano. Mix everything well into the chicken until every piece is evenly coated with the spice blend.

Step 5: Add the Tomato Paste
Add a little bit of sriracha and the tomato paste to the pan. Cook this over medium-high heat for about 1 minute, stirring it into the chicken so the paste darkens slightly and the flavors deepen.

Step 6: Make the Sauce
Gradually add the milk and cream and stir everything together. Cook at medium-high heat while continuously stirring for about 1 minute or until the mixture starts to bubble and come together as a sauce.

Step 7: Add the Cheese
Add your mozzarella cheese and gently mix it in until the cheese has fully melted and incorporated into the sauce. The result should be smooth, creamy, and rich.

Step 8: Add the Pasta Water
Gradually add the leftover pasta water and mix it into the sauce. Bring the mixture to a boil and keep stirring continuously. This step took about 1.5 minutes and helps the sauce thicken to the perfect consistency.

Step 9: Add the Pasta
At this point your sauce should be quite thick and creamy. Add the cooked pasta and coat it fully with the sauce. Add a final sprinkle of mozzarella cheese on top, then cover with a lid and let the pasta cook over low heat until the cheese on top has melted beautifully.

Step 10: Serve and Enjoy
Plate your cheesy chicken pasta, serve it immediately while it’s hot, and enjoy every creamy, flavorful bite.

Variations to Try

This cheesy chicken pasta recipe is incredibly versatile. Here are a few ways to make it your own.

Swap the Protein
If chicken isn’t your preference, this recipe works brilliantly with shrimp or Italian sausage. Shrimp cooks even faster than chicken, so adjust your timing to about 2 minutes per side. Sausage adds a smoky, hearty quality that pairs beautifully with the creamy tomato-based sauce.

Make It Vegetarian
Skip the chicken entirely and add sautéed mushrooms, baby spinach, or roasted red peppers instead. The bold spice blend still delivers incredible flavor, and the creamy mozzarella sauce remains the star of the dish. This version of baked cheesy pasta is just as satisfying.

Add Extra Heat
If you love bold, spicy food, double the sriracha and add a pinch of cayenne pepper alongside the other spices. Crushed red pepper flakes sprinkled on top at serving also add a pleasant kick without disrupting the balance of the sauce.

Storage and Serving Suggestions

Storing Leftovers
Store any leftover cheesy chicken pasta in an airtight container in the refrigerator for up to 3 days. When reheating, add a small splash of milk or water to loosen the sauce before warming it gently on the stovetop over low heat. Stir frequently to prevent sticking. Avoid reheating at high temperatures as it can cause the cheese to separate and the sauce to dry out.

Freezing
This dish can be frozen for up to 2 months. Allow it to cool completely before transferring to a freezer-safe container. Thaw overnight in the refrigerator before reheating.

Serving Suggestions
Serve this dish with a simple green salad and crusty garlic bread to round out the meal. A sprinkle of fresh parsley or basil on top adds a pop of color and freshness that complements the richness of the sauce beautifully.

Frequently Asked Questions

Can I use a different type of pasta?
Absolutely. Penne, rigatoni, fusilli, and farfalle all work well with this recipe. Choose a shape with ridges or hollow centers since they hold onto the creamy sauce more effectively than flat pasta varieties.

Can I use a different cheese?
Yes. While mozzarella provides the best melt and mild creaminess, you can substitute cheddar, gouda, or a mix of both for a sharper, more complex flavor. Avoid pre-shredded cheese when possible since it contains anti-caking agents that can affect how smoothly it melts.

What if my sauce is too thick?
Add a little more reserved pasta water, one tablespoon at a time, until you reach your desired consistency. The starch in the pasta water helps maintain the sauce’s glossy texture as you thin it out.

Can I make this dish ahead of time?
You can prepare the sauce and cook the chicken in advance and store them separately. Cook fresh pasta when ready to serve and combine everything in the pan for the best texture and flavor.

Is this recipe suitable for kids?
Yes, with one small adjustment. Reduce or skip the sriracha and red chilli powder for a milder version that younger palates will enjoy. The garlic, cheese, and creamy sauce still deliver loads of flavor without the heat.
