Instructions
- Step 1: Brown the Beef and Onions In a large skillet with high sides, heat olive oil over medium-high heat. Add ground beef and diced onion. Cook until beef is no longer pink and onion is softened, about 8–10 minutes. Drain any excess grease.
- Step 2: Add Garlic and Seasoning Stir in minced garlic and taco seasoning. Cook for 30 seconds, stirring frequently.
- Step 3: Add Liquids and Rice Pour in beef broth, Rotel, and tomato paste. Stir until well combined and bring to a boil. Add the uncooked rice, stir, and return to a boil.
- Step 4: Simmer Cover the skillet with a lid. Reduce heat to medium-low or low and simmer for 15 minutes, or until rice is tender and has absorbed most of the liquid.
- Step 5: Add Cheese Sprinkle shredded cheese evenly over the top. Cover and cook for another 5 minutes, or until cheese is melted and gooey.
- Step 6: Serve Serve hot with your favorite toppings like sour cream, guacamole, salsa, or chopped cilantro.
