- 1 pound (450g) large shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh lime juice (about 1 medium lime)
- 1/4 cup (15g) fresh cilantro, finely chopped
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups (200g) shredded cabbage (green or purple, or a mix)
- 1/2 cup (50g) shredded carrots
- 1/4 cup (15g) red onion, thinly sliced
- 1/4 cup (15g) fresh cilantro, chopped
- 1/3 cup (75g) sour cream
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- 1 teaspoon honey
- Salt and pepper to taste
- 8 small corn or flour tortillas
- 1 avocado, sliced
- Lime wedges
- Hot sauce (optional)
Instructions
- Step 1: Marinate the Shrimp In a medium bowl, combine the olive oil, minced garlic, lime juice, chopped cilantro, cumin, chili powder, salt, and pepper. Add the peeled and deveined shrimp to the marinade and toss until evenly coated. Let the shrimp marinate for 15-20 minutes (but no longer than 30 minutes, as the lime juice will start to cook the shrimp).
- Step 2: Prepare the Creamy Slaw While the shrimp marinates, make your slaw. In a large bowl, combine the shredded cabbage, carrots, red onion, and cilantro. In a separate small bowl, whisk together the sour cream, mayonnaise, lime juice, honey, salt, and pepper. Pour this dressing over the vegetables and toss until everything is well-coated. Refrigerate the slaw while you cook the shrimp to allow flavors to develop.
- Step 3: Cook the Shrimp Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer, working in batches if necessary to avoid overcrowding. Cook for 2 minutes on each side until the shrimp are pink, opaque, and just cooked through. Transfer to a clean plate and loosely cover to keep warm.
- Step 4: Warm the Tortillas Heat your tortillas according to your preference – directly over a gas flame, in a dry skillet, or wrapped in damp paper towels and microwaved for 30 seconds. Keep warm by wrapping in a kitchen towel.
- Step 5: Assemble Your Tacos Lay out your warmed tortillas and top each with a generous spoonful of the creamy slaw. Add 3-4 of the Cilantro Lime Shrimp on top of the slaw. Garnish with sliced avocado, additional fresh cilantro, and a squeeze of lime. Serve immediately with hot sauce on the side if desired.
