  • 1 cup shredded Parmesan cheese, divided
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper to taste

Instructions

  1. Step 1: Heat olive oil and butter in a large Dutch oven or deep skillet over medium heat. Once the butter has melted, add diced onions, carrots, and celery. Season with ½ teaspoon salt and cook for 5-7 minutes until vegetables begin to soften, stirring occasionally to prevent browning.
  2. Step 2: Add minced garlic to the vegetable mixture and cook for another 30 seconds until fragrant. Push vegetables to one side of the pan and add chicken pieces to the cleared space. Season chicken with ½ teaspoon salt and ¼ teaspoon pepper. Cook for 4-5 minutes, stirring occasionally, until chicken is no longer pink on the outside but not fully cooked through.
  3. Step 3: Sprinkle dried thyme, rosemary, and nutmeg over the chicken and vegetables, stirring to coat everything evenly with the aromatic herbs. Allow the herbs to toast for about 30 seconds—this quick step releases their essential oils and intensifies their flavor.
  4. Step 4: Add the uncooked orzo to the pot and stir to coat with the flavorful mixture. Pour in chicken broth and bring to a simmer. Reduce heat to medium-low, cover, and cook for 8-10 minutes, stirring occasionally to prevent sticking, until orzo is nearly tender.
