Description

Ingredients

  • 14 ounces pasta (like shells)
  • 2 tbsp unsalted butter
  • 6 garlic cloves (minced)
  • 1 shallot (finely chopped)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • 1.1 pounds cherry tomatoes
  • ½ cup dry white Grape juice
  • 10 ounces burrata
  • 2 tbsp tomato paste
  • ½ ounce grated Parmesan
  • Chili flakes (for serving)
  • Chopped parsley (for serving)

Instructions

  1. Step 1: Bring a large pot of generously salted water to a boil.
  2. Step 2: Heat a large skillet over low and melt the butter. Add garlic and shallot, cook until soft and fragrant for about 2 minutes. Add salt, pepper, Italian seasoning and cherry tomatoes. Cover and allow to braise for 10 minutes.
  3. Step 3: Meanwhile, add the pasta to the pot with boiling water and cook until al dente. Scoop up 1/2 cup cooking water and drain the pasta.
  4. Step 4: When the tomatoes are ready, pour in Grape juice and simmer for 3 minutes over medium.
  5. Step 5: Next, transfer braised tomatoes to your blender. Add burrata, tomato paste and Parmesan. Blend until smooth, then return to the skillet. Set heat over low to prevent the sauce from becoming cold. Taste and adjust salt.
  6. Step 6: Toss with pasta, add a splash of water if needed. Stir until glossy. Finish off with black pepper, chili flakes and parsley. Enjoy!
