Description

Crockpot Garlic Parmesan Chicken and Potatoes. Tender chicken and creamy potatoes cooked in garlic and Parmesan sauce, a comforting crowd-pleaser.


Ingredients

  • 2 lbs (900g) baby potatoes, halved (red or gold work best)
  • 6 cloves garlic, minced (about 2 tablespoons)
  • 1/4 cup (60ml) olive oil
  • 1/4 cup (60ml) chicken broth
  • 1/2 cup (50g) freshly grated Parmesan cheese, plus extra for serving
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 2 tablespoons butter, cut into small pieces

Instructions

  1. Step 1: Prepare the Ingredients Begin by washing and halving your baby potatoes – no need to peel them as the skins add texture and nutrients. Pat your chicken thighs dry with paper towels (this helps them brown better later) and trim any excess fat. In a small bowl, combine the garlic powder, onion powder, Italian seasoning, salt, and pepper to create your seasoning mix.
  2. Step 2: Season and Layer Coat the bottom of your crockpot with a tablespoon of olive oil. Place the halved potatoes in the bottom of your slow cooker and drizzle with half the olive oil and sprinkle with half the seasoning mix. Toss to ensure even coating.
