  • 1 cup (240ml) heavy cream
  • 1 cup (240ml) whole milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon ground nutmeg
  • 1 1/2 cups (170g) shredded cheese (Swiss, Gruyère, or cheddar work beautifully)
  • 2 cups mix-ins of choice (such as sautéed spinach, mushrooms, bell peppers, or ham)
  • 2 tablespoons (30g) butter for greasing the dish

Instructions

Step 1: Prepare Your Ingredients

Preheat your oven to 350°F (175°C). While it’s heating, take out your eggs and dairy products to bring them to room temperature. This ensures a smoother mixture and more even cooking. Generously butter a 9-inch pie dish or quiche pan, making sure to get into all the corners and up the sides. The butter creates a natural barrier that helps prevent sticking and adds a subtle richness to the outer edge of your Crustless Quiche.

Step 2: Prepare Your Fillings

Now, prepare any mix-ins you’ll be using. If you’re including vegetables like spinach, mushrooms, or bell peppers, sauté them in a little olive oil until they’re just tender and any excess moisture has evaporated. Season them lightly with salt and pepper. For proteins like ham or bacon, make sure they’re fully cooked and cut into bite-sized pieces. Having everything prepped before mixing your egg base ensures you won’t be rushing once the custard is ready.

Step 3: Mix The Egg Base

In a large bowl, whisk the eggs until they’re completely blended. Pour in the heavy cream and milk, continuing to whisk until the mixture is uniform.
