Ingredients

Scale
  • 1 lb (450g) lean ground beef
  • 1 medium onion, diced (about 1 cup)
  • 2 cloves garlic, minced
  • 1 packet (1.25 oz/35g) taco seasoning
  • 1 can (15 oz/425g) black beans, drained and rinsed
  • 1 can (15 oz/425g) pinto beans, drained and rinsed
  • 1 can (15 oz/425g) corn kernels, drained
  • 1 can (10 oz/285g) diced tomatoes with green chilies
  • 1 can (15 oz/425g) fire-roasted diced tomatoes
  • 4 cups (950ml) beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste

Instructions

  1. Step 1: Brown the Meat Heat olive oil in a large Dutch oven or soup pot over medium-high heat. Add the ground beef, breaking it apart with a wooden spoon. Season with a pinch of salt and pepper, then cook until nicely browned, about 5-7 minutes. Don’t rush this step—proper browning creates deep flavor for your Easy Taco Soup.
  2. Step 2: Add Aromatics Add the diced onion to the browned meat and cook until softened and translucent, about 3-4 minutes. Add minced garlic and cook for another 30 seconds until fragrant, being careful not to burn it.
  3. Step 3: Season the Base Sprinkle the taco seasoning, dried oregano, and ground cumin over the meat mixture. Stir well to coat everything evenly, allowing the spices to toast for about 1 minute. You’ll smell the aromatic spices bloom, which is exactly what you want for authentic taco soup flavor.
  4. Step 4: Build the Soup Pour in the beef broth, scraping the bottom of the pot to release any browned bits—these contain concentrated flavor. Add both cans of diced tomatoes (with their juices), drained corn, and drained beans. Stir to combine all ingredients thoroughly.
  5. Step 5: Simmer to Perfection Bring the Easy Taco Soup to a boil, then reduce heat to maintain a gentle simmer. Cover partially and cook for 15-20 minutes, allowing the flavors to meld together. Taste and adjust seasonings as needed, adding more salt, pepper, or even a pinch of cayenne if you prefer more heat.
  6. Step 6: Serve and Garnish Ladle your hot taco soup into bowls and set up a garnish station with all the toppings. The contrast between the hot soup and cool toppings like sour cream and avocado creates a delightful temperature and texture experience. Let everyone customize their own bowl for maximum enjoyment!
