Ingredients

Scale
  • 8 oz (225g) fresh ramen noodles (or 2 packages instant ramen, seasoning packets discarded)
  • 1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 8 garlic cloves, minced (about 3 tablespoons)
  • 1 tablespoon ginger, freshly grated
  • 23 tablespoons gochujang paste (Korean chili paste)
  • 4 cups (950ml) chicken stock
  • 1 cup (240ml) heavy cream
  • 2 tablespoons unsalted butter
  • 2 green onions, thinly sliced
  • 2 soft-boiled eggs, halved
  • 1 cup baby spinach leaves
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons white miso paste
  • Fresh cilantro and lime wedges for garnish

Instructions

  1. Step 1: Prepare the Base Heat vegetable oil in a large pot over medium heat. Add minced garlic and grated ginger, sautéing until fragrant and just starting to turn golden (about 2 minutes). Be careful not to burn the garlic – you want that nutty aroma without any bitterness. Add the gochujang paste and stir continuously for 30 seconds to toast the spices and release their essential oils.
  2. Step 2: Cook the Chicken Push the garlic mixture to one side of the pot and increase heat to medium-high. Add chicken pieces in a single layer (work in batches if needed) and let them sear undisturbed for 2-3 minutes until golden brown. Flip and cook for another 2 minutes. The caramelization here adds incredible depth to your Fiery Chicken Ramen with Creamy Garlic Sauce.
  3. Step 3: Create the Broth Pour in chicken stock, scraping up any browned bits from the bottom of the pot – that’s pure flavor! Add soy sauce and bring to a gentle simmer. Cover partially and cook for 10 minutes to allow the flavors to meld and the chicken to become perfectly tender.
  4. Step 4: Add the Creamy Element Reduce heat to low and slowly whisk in heavy cream and miso paste (dissolved in a small amount of broth first). Simmer gently for 5 minutes – don’t let it boil or the cream might separate. Add butter and stir until completely melted, creating that signature silky texture.
  5. Step 5: Cook the Noodles and Assemble While the broth simmers, cook ramen noodles according to package instructions until al dente (usually just 2-3 minutes). Drain well. Divide noodles between four bowls, then ladle the hot chicken and creamy garlic broth over them. Top each bowl with half a soft-boiled egg, baby spinach (which will wilt from the heat), sliced green onions, a drizzle of sesame oil, red pepper flakes, and fresh cilantro. Serve immediately with lime wedges on the side for brightness.

Notes

Fresh ingredients will always yield the best flavor results.
