- 2 pounds (900g) baby potatoes, halved (red or yellow work best)
- 6 cloves garlic, minced (about 2 tablespoons)
- 1/2 cup (120ml) chicken broth, low-sodium
- 1/4 cup (60ml) olive oil
- 1/2 cup (50g) freshly grated Parmesan cheese, plus extra for serving
- 2 tablespoons Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
- 2 tablespoons butter, melted
Instructions
- Step 1: Prepare the Seasoning Mixture In a medium bowl, combine the minced garlic, Italian seasoning, paprika, salt, black pepper, melted butter, and olive oil. Stir until thoroughly combined, creating a fragrant herb and garlic infusion that will serve as the flavor base for your Garlic Parmesan Crockpot Chicken and Potatoes.
- Step 2: Prepare the Potatoes Wash and halve the baby potatoes, leaving the skin on for texture and nutrition. Place the potato halves in the bottom of your 6-quart slow cooker, then pour about half of your seasoning mixture over them.
