  • 2 cups (480ml) chicken or seafood broth
  • 1/2 cup (120ml) dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • Zest and juice of 1 lemon
  • 2 teaspoons dried oregano
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup (50g) grated Parmesan cheese
  • 1/4 cup (15g) fresh parsley, chopped
  • 1/4 cup (15g) fresh dill, chopped (optional)

Instructions

  1. Step 1: Prepare the Shrimp Pat the shrimp dry with paper towels to ensure proper browning. Season them lightly with salt and pepper. Heat 1 tablespoon of olive oil in a large, deep skillet or Dutch oven over medium-high heat. Once hot, add the shrimp in a single layer (work in batches if needed) and cook for about 1 minute per side until they’re just turning pink. They should be only partially cooked at this stage. Remove the shrimp to a plate and set aside.
  2. Step 2: Create the Flavor Base In the same pot, add the remaining 2 tablespoons of olive oil. Add the diced onion and cook for 2-3 minutes until it begins to soften. Add the minced garlic and diced bell pepper, cooking for another 2 minutes until fragrant.
