Description

  • 1 lb (450g) cheese tortellini (fresh or frozen)
  • 1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch pieces
  • 4 tablespoons (56g) butter, divided
  • 6 cloves garlic, minced (about 2 tablespoons)
  • 12 teaspoons red pepper flakes (adjust to your spice preference)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • 3 cups (720ml) chicken broth
  • 1 cup (240ml) heavy cream
  • ½ cup (50g) grated Parmesan cheese
  • 2 cups (60g) fresh spinach (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Step 1: Prepare the Chicken Season the chicken pieces generously with salt and pepper. In a large, deep skillet or Dutch oven, melt 2 tablespoons of butter over medium-high heat. Once the butter begins to foam slightly, add the chicken pieces in a single layer, being careful not to overcrowd the pan. Allow them to cook undisturbed for 2-3 minutes until golden brown on one side, then flip and cook for another 2 minutes. The chicken doesn’t need to be fully cooked at this stage. Transfer to a plate and set aside.
  2. Step 2: Create the Garlic Butter Base Reduce the heat to medium and add the remaining 2 tablespoons of butter to the same pot. Once melted, add the minced garlic and red pepper flakes, stirring constantly for 30-60 seconds until fragrant but not browned. Add the Italian seasoning and paprika, stirring to coat the aromatics in the spices, releasing their essential oils.
  3. Step 3: Develop the Sauce Pour in the chicken broth, using a wooden spoon to scrape up all the flavorful browned bits from the bottom of the pan. Bring the mixture to a gentle simmer and allow it to reduce by about one-quarter, approximately 5 minutes. This concentrates the flavors for your One Pot Spicy Garlic Butter Chicken Tortellini sauce. Stir in the heavy cream and return to a simmer.
  4. Step 4: Cook the Tortellini Add the tortellini to the simmering sauce, gently stirring to ensure all pieces are submerged. Return the chicken to the pot along with any accumulated juices. Cook for approximately 3-5 minutes for fresh tortellini or 5-7 minutes for frozen, stirring occasionally, until the pasta is tender but still has a slight bite and the chicken is fully cooked.
  5. Step 5: Finish and Serve Reduce the heat to low and stir in the Parmesan cheese until melted and incorporated. If using spinach, fold it in now and allow it to wilt for 1-2 minutes in the residual heat. Taste and adjust seasoning with additional salt, pepper, or red pepper flakes as desired. Remove from heat and let stand for 2 minutes to allow the sauce to thicken slightly.
