- 1 teaspoon vanilla extract

- 3 cups (360g) powdered sugar
- 2 tablespoons (30ml) heavy cream
- 12 ounces (340g) semi-sweet or dark chocolate, chopped
- 2 tablespoons (28g) coconut oil or shortening

- Step 1: Create the Filling In a large mixing bowl, combine the creamy peanut butter and softened butter. Using an electric mixer, beat on medium speed until completely smooth and well incorporated, about 2 minutes. Add the vanilla extract and salt, then mix again briefly to combine. With the mixer on low speed, gradually add the powdered sugar one cup at a time, allowing each addition to incorporate before adding more. The mixture will become increasingly thick. Add the heavy cream and beat until the filling reaches a smooth, moldable consistency that holds together when pressed.
- Step 2: Form the Bon Bons Cover and refrigerate the peanut butter mixture for 30 minutes to firm up slightly. Once chilled, line a baking sheet with parchment paper. Using a small cookie scoop or measuring spoon, portion the filling into 1-inch balls (about 1 tablespoon each). Roll each portion between your palms to create smooth, even spheres. If the mixture becomes too soft while working, return it to the refrigerator for 10 minutes before continuing. Place the formed balls on the prepared baking sheet, spacing them about an inch apart.
- Step 3: Freeze Before Dipping Transfer the baking sheet with the peanut butter balls to the freezer and chill for at least 20 minutes, or until firm. This crucial step ensures the centers stay intact during the dipping process. While the centers are freezing, prepare your chocolate coating.
- Step 4: Prepare the Chocolate Coating Fill a medium saucepan with about an inch of water and bring to a simmer over medium-low heat. Place the chopped chocolate and coconut oil in a heat-safe bowl that fits over the saucepan without touching the water. Place the bowl over the simmering water and stir occasionally until the chocolate is almost completely melted. Remove from heat and continue stirring until fully melted and smooth. Let the chocolate cool for 5 minutes, stirring occasionally, until it’s still fluid but not hot.
- Step 5: Dip and Decorate Remove the peanut butter balls from the freezer. Working with one ball at a time, place it on a fork and lower it partially into the melted chocolate. Use a spoon to help coat the top and sides, then lift and gently tap the fork against the bowl’s edge to remove excess chocolate. Carefully slide each dipped Peanut Butter Bon Bon onto the parchment-lined baking sheet. If desired, immediately sprinkle with chopped peanuts, sea salt, or drizzle with contrasting chocolate before the coating sets. Work quickly with small batches, returning the remaining centers to the freezer if they begin to soften.
