- 3 cups (710ml) chicken broth
- 1 medium onion (about 1 cup/160g), diced
- 1 red bell pepper (about 1 cup/150g), diced
- 2 celery stalks (about ½ cup/50g), thinly sliced
- 3 cloves garlic (about 1 tablespoon/9g), minced
- 2 tablespoons (30ml) olive oil
- 1 teaspoon dried oregano
- 1 teaspoon paprika (smoked paprika adds extra depth)
- ½ teaspoon dried thyme
- Salt and freshly ground black pepper to taste
- ¼ cup fresh parsley, chopped, for garnish
Instructions
- Step 1: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced sausage in a single layer and cook for 3-4 minutes without stirring to allow proper browning.
