  • 1½ cups (300g) long-grain white rice, rinsed and drained
  • 3 cups (710ml) chicken broth
  • 1 medium onion (about 1 cup/160g), diced
  • 1 red bell pepper (about 1 cup/150g), diced
  • 2 celery stalks (about ½ cup/50g), thinly sliced
  • 3 cloves garlic (about 1 tablespoon/9g), minced
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika (smoked paprika adds extra depth)
  • ½ teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • ¼ cup fresh parsley, chopped, for garnish

Instructions

  1. Step 1: Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced sausage in a single layer and cook for 3-4 minutes without stirring to allow proper browning. Flip and brown the other side for another 2-3 minutes. The caramelization adds incredible flavor to your Sausage and Rice Recipe.
