- 1 tablespoon sesame oil
- 1/4 cup diced yellow or white onion
- 2 cloves garlic, minced
- 1 tablespoon minced fresh ginger or ginger paste
- 10 oz ground chicken
- 1/4 cup low-sodium soy sauce or coconut aminos
- 2 tablespoons Thai sweet red chili sauce
- Juice of 1 lime
- 1 teaspoon maple syrup or honey
- 1/3 cup chopped cashews (raw or roasted)
- 1/4 cup chopped scallions
- 1/4 cup fresh cilantro, chopped
- 1/4–1/2 cup shredded carrots
- Sesame seeds for garnish
- 1 head butter lettuce, leaves separated, rinsed, and dried
Instructions
- Step 1: Heat sesame oil in a skillet over medium-high heat. Add diced onions and sauté for 2-3 minutes until softened and translucent. Add minced garlic and ginger, stirring continuously for another 2 minutes.
- Step 2: Add ground chicken to the skillet, breaking it up with a wooden spoon. Season lightly with salt and pepper. Cook for about 3-4 minutes until golden brown and fully cooked.
- Step 3: In a small bowl, whisk together soy sauce, Thai chili sauce, lime juice, and maple syrup (or honey).
- Step 4: Pour the sauce over the cooked chicken and sprinkle with chopped cashews. Stir everything together, then reduce heat to low and let cook for an additional 2 minutes. Remove from heat, allowing the mixture to cool slightly before adding shredded carrots, scallions, and cilantro.
- Step 5: Place a spoonful of the chicken mixture into each butter lettuce leaf. Top with additional pan sauce and a sprinkle of sesame seeds. Repeat with remaining lettuce leaves and serve immediately.
