- 1 pound ground sausage
- ½ cup diced onion
- 2 teaspoons minced garlic
- 2 tablespoons flour
- 2 tablespoons tomato paste
- 8 cups chicken broth
- 1 tablespoon Italian seasoning
- 1 teaspoon paprika
- ½ cup sun-dried tomatoes, drained and chopped
- ¾ cup dry orzo pasta
- 1 cup heavy cream
- 3 cups baby spinach
- ¾ cup grated Parmesan cheese
- Salt and pepper, to taste
- Red pepper flakes, for garnish (optional)
Instructions
- Step 1 – Brown sausage and onions in a pot over medium-high heat. Break up the sausage as it cooks. Add garlic and stir for 1 minute. The smell means it’s working!
- Step 2 – Mix in flour and tomato paste. This thickens the soup nicely. Stir fast to avoid lumps. (Hard-learned tip: scrape the pan bottom well here.)
- Step 3 – Pour in broth, spices, sun-dried tomatoes, and orzo. Simmer 10-13 minutes. Orzo should be tender but not mushy. Taste a piece to check.
- Step 4 – Add cream, spinach, and parmesan. Stir until spinach wilts. Cheese melts into creamy goodness. Salt and pepper to finish.
