  • Red pepper flakes, for garnish (optional)

Instructions

  1. Step 1 – Brown sausage and onions in a pot over medium-high heat. Break up the sausage as it cooks. Add garlic and stir for 1 minute. The smell means it’s working!
  2. Step 2 – Mix in flour and tomato paste. This thickens the soup nicely. Stir fast to avoid lumps. (Hard-learned tip: scrape the pan bottom well here.)
  3. Step 3 – Pour in broth, spices, sun-dried tomatoes, and orzo. Simmer 10-13 minutes. Orzo should be tender but not mushy. Taste a piece to check.
  4. Step 4 – Add cream, spinach, and parmesan. Stir until spinach wilts. Cheese melts into creamy goodness. Salt and pepper to finish.
