Southwest Turkey and Egg Breakfast Skillet  A zesty, protein-packed skillet with lean turkey, eggs, bell peppers, and spices for a satisfying, flavorful start to your day!


Ingredients

  • 1 pound (454g) lean ground turkey
  • 1 tablespoon (15ml) olive oil
  • 1 medium onion, diced (about 1 cup/160g)
  • 1 red bell pepper, diced (about 1 cup/150g)
  • 1 green bell pepper, diced (about 1 cup/150g)
  • 2 cloves garlic, minced (about 2 teaspoons/6g)
  • 1 jalapeño, seeded and finely diced (optional, for heat)
  • 2 teaspoons (6g) chili powder
  • 1 teaspoon (3g) ground cumin
  • ½ teaspoon (2g) smoked paprika
  • ½ teaspoon (3g) salt
  • ¼ teaspoon (1g) black pepper
  • 46 large eggs
  • 1 cup (113g) shredded Mexican-blend cheese
  • ¼ cup (4g) fresh cilantro, chopped
  • 1 avocado, sliced (for serving)
  • Lime wedges (for serving)

Instructions

  1. Step 1 : Heat a large 12-inch cast iron skillet over medium-high heat. Add the olive oil and allow it to become hot but not smoking. Add the ground turkey, breaking it up with a wooden spoon into small pieces. Cook for 5-6 minutes until the turkey is no longer pink and begins to brown slightly. Season with half of the salt and pepper as it cooks.
  2. Step 2  : Reduce heat to medium and add the diced onion, red and green bell peppers, and jalapeño (if using) to the skillet with the turkey. Cook for 3-4 minutes until the vegetables begin to soften. Add the minced garlic and cook for another 30 seconds until fragrant, stirring constantly to prevent burning.
  3. Step 3 :  Sprinkle the chili powder, cumin, smoked paprika, and remaining salt and pepper over the turkey and vegetable mixture. Stir well to coat everything evenly with the spices. Allow the mixture to cook for another 2 minutes so the spices become aromatic and fully incorporate into the Southwest Turkey and Egg Breakfast Skillet.
  4. Step 4  : Using the back of your spoon, create 4-6 wells (depending on how many eggs you’re using) in the turkey mixture. Crack an egg into each well, being careful to keep the yolks intact. Season the eggs lightly with a pinch of salt and pepper.
  5. Step 5  : Sprinkle the shredded cheese around and over the eggs, then cover the skillet with a lid. Reduce heat to medium-low and cook for about 3-5 minutes until the egg whites are set but the yolks remain runny (or cook longer if you prefer firmer yolks).
  6. Step 6  : Remove the skillet from heat and garnish your Southwest Turkey and Egg Breakfast Skillet with fresh cilantro. Serve immediately with sliced avocado and lime wedges on the side, allowing each person to customize their portion with these fresh accompaniments.
