Ingredients

  • Ramen: 2 packages (6 oz/170g) good-quality instant ramen (discard seasoning packets), 4 cups beef broth, 2 tablespoons gochujang (Korean chili paste), 1 tablespoon doenjang (Korean soybean paste) or miso paste, 1 tablespoon mirin (sweet rice wine), 2 teaspoons gochugaru (Korean chili flakes), adjust to taste, 2 soft-boiled eggs, 3 green onions, sliced diagonally, 1 sheet nori (seaweed), cut into strips, 2 teaspoons toasted sesame seeds, 1 tablespoon neutral oil for grilling beef

Instructions

  1. Step 1: Marinate the Beef Combine soy sauce, sesame oil, brown sugar, minced garlic, and grated ginger in a medium bowl. Add the thinly sliced beef and toss to coat evenly. Let it marinate at room temperature for 15-30 minutes while you prepare the other components. This brief marination allows the meat to tenderize without becoming mushy.
  2. Step 2: Prepare the Eggs Bring a small pot of water to a rolling boil. Gently lower room-temperature eggs into the water and set a timer for exactly 6.5 minutes for the perfect jammy yolk. While waiting, prepare an ice bath. When the timer rings, transfer eggs immediately to the ice bath for 5 minutes.   3. Step 3: Create the Broth In a medium pot, heat 1 teaspoon oil over medium heat.
