- Step 1: Prepare the Granola Mixture Preheat your oven to 325°F (165°C) and generously grease a 12-cup muffin tin with cooking spray or coconut oil. In a large mixing bowl, combine the rolled oats, chopped nuts, and seeds. In a separate small bowl, whisk together the maple syrup (or honey), melted coconut oil, vanilla extract, cinnamon, and salt until fully incorporated. Pour this wet mixture over the dry ingredients and stir until everything is evenly coated.
